Raspberries and almonds are an unbeatable combination and this tray bake is no exception. Rich and moist with the subtle crunch of coconut, this will keep absolutely everybody happy. Lovely as part of a decadent afternoon tea in the garden on a balmy late Summer’s day or divine, warm with a thick dollop of Jersey cream. Delicious!

140g caster sugar
25g desiccated coconut
10g freeze dried raspberries
